Corn beef and cabbage and Irish soda bread

Happy St. Patty’s Day!

1 package of corn beef with the seasoning

1 small bag of baby carrots

1 head of cabbage

6 red potatoes

2 cups of water

salt and pepper to taste

Put all the ingredients in a slow cooker for 6-8 hours on low.

Irish Soda Bread:

  • 4  cups flour
  • 2 Tbsp sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 4 Tbsp butter
  • 1 cup raisins
  • 1 large egg, lightly beaten
  • 1 3/4 cups buttermilk

 Combine the flour, the sugar, salt, and baking soda into a large mixing bowl.  work the butter into the flour mixture until it resembles coarse meal, then add in the raisins. then add the egg and buttermilk.  kneed until the mixture comes together.  grease a cast iorn skillet and bake for 40 min.

Veggie Lasagna

I have not been eating meat for lent this year.  I think I will continue with at least one meatless dish a week.

Meatless Monday Meal:

Ingredients:

1/2 package lasagna noodles

1 jar alfredo sauce

1 broccoli crown

1 zucchini

1onion

1 red and 1 yellow pepper

1 container of riccota cheese

1 egg

salt and pepper to taste

Italian seasoning

1/2 c.parmesan cheese

6 slices of mozzarella cheese

How to make:

Boil the noodles and set aside to cool.  saute the veggies in olive oil, salt/pepper and Italian seasoning.  Mix ricotta cheese, parmesan cheese, egg, salt and pepper and Italian seasoning together is a bowl.  Now start layering in a baking dish.  first some of the alfredo sauce, noodles, ricotta cheese, veggies.  repeat until finished.  top with the mozzarella cheese.  Baked covered for 30 min at 375 and uncovered for 10 min.

Tex-mex tater tot casserole

This is a family favorite.  Who doesn’t like a tater tot.  I like to add veggies to make it kind of healthy and it adds some color too.

Ingredients:

1 pound ground beef or turkey

1 can mushroom soup

1 package of frozen mixed veggies

sprinkle of taco seasoning

1/2 package of nacho cheese blend

enough tater tots to cover the top

How to make:

brown the meat with the seasoning and transfer to a baking dish.  pour the soup mix on top, then the veggies and cover with the tater tots.  Lastly add the cheese on top.  Bake covered with foil for 20 min at 375 and uncovered for 10 to brown the top.

Cinnamon roll french toast bake

This is a recipe I found from Pillsbury and I made it for teacher appreciation week at Lexi’s school.  It was a big hit and it was so easy to make.

INGREDIENTS

French Toast Bake

 cup LAND O LAKES® Butter, melted
2
 cans (12.4 oz each) Pillsbury® refrigerated cinnamon rolls with icing

 LAND O LAKES® Eggs
1/2
 cup heavy whipping cream
2
 teaspoons ground cinnamon
2
 teaspoons vanilla
1
 cup Fisher® Chef’s Naturals® Chopped Pecans
1
 cup maple syrup
Garnish
 Icing from cinnamon rolls
 Powdered sugar
1/2
 cup maple syrup, if desired

DIRECTIONS

1Heat oven to 375°F. Pour melted butter into ungreased 13×9-inch (3-quart) glass baking dish. Separate both cans of dough into 16 rolls; set icing aside. Cut each roll into 8 pieces; place pieces over butter in dish.2In medium bowl, beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently pour over roll pieces. Sprinkle with pecans; drizzle with 1 cup syrup.3Bake 20 to 28 minutes or until golden brown. Cool 15 minutes. Meanwhile, remove covers from icing; microwave on Medium (50%) 10 to 15 seconds or until thin enough to drizzle.4Drizzle icing over top; sprinkle with powdered sugar. If desired, spoon syrup from dish over individual servings. Serve with the additional 1/2 cup maple syrup.

Coconut chicken and roasted potatoes

I love to try different seasoning in the bread crumb mixture for our chicken dinners.  Tonights was coconut and panko bread crumbs.  Some other favorites are cajun seasoning, jerk seasoning, parmesan cheese, or a ranch packet.

Ingredients:

3-4 chicken breasts

1 egg

1 c. panko bread crumbs

1/2 c. shredded coconut

salt/pepper to taste

enough oil to cover the pan

6 yukon gold potatoes

1 sprinkle lipton savory herb soup mix

olive oil

How to make:

cut the chicken breasts in half and pound out slightly so they will cook faster and won’t burn the coconut in the pan.  Get two bowls one for the egg and water  and the other for the panko and coconut.  dip the chicken in the egg then the panko and into the oil on med low heat.  cook on both sides for 3-4 min.  place on cooling rack.  Cut the potatoes into 6 to 8 pieces.  sprinkle the herb seasoning and olive oil bake for 20 min until fork tender at 375

Jerk Chicken Nachos

I guess you might be able to tell that I love jerk seasoning.  It is sweet and spicy at the same time.  These nachos are super easy and yummy.  I used some of the left over grilled chicken from the other night to make these super quick.

Ingredients:

2-3 grilled chicken tenders

1 pkg.  cheddar cheese

1 T.  jerk seasoning

Tortilla chips

salsa

How to make:

Chop up the chicken.  Add the chicken, jerk season and cheese to the bowl, mix with hands.  Sprinkle over the tortilla chips.  Bake at 400 degrees for 10 min. until the cheese has melted.  Remove and add toppings:  salsa.  I also like black beans, lettuce, onions and jalapenos on mine. (the kids do not)

grilled chicken pasta primavera

It is starting to get nice out and that means more grilling.  This recipe has something for everyone.  Grilled chicken (Tim), pasta (Lexi), cream sauce (Grady) and lots of veggies (Me).

Ingredients:

4-5 chicken tenders

1/2 cup Italian dressing

1 T.  Dijion mustard

1 lb.  ziti pasta

1 yellow squash

2 heads of broccoli

1 zucchini

1 yellow onion

1 T. olive oil

1 T. butter

salt and pepper to taste

splash of chicken stock

1 container of philly cream cheese cooking sauces

parmesan cheese

How to make:

marinate the chicken in the Italian dressing and dijion mustard for at least 1 hour.  grill on both sides and set aside.  boil the pasta, drain and set aside.  In a large pan saute the veggies in olive oil and butter seasoned with the salt and pepper.  Add the pasta to the pan then the cream cheese and chicken stock until it is saucy and not too thick.  Top with parmesan cheese and the grilled chicken.
